  • 3-3 1/2 lb
    broiler-fryer, cut up
  • 1 can
    sliced mushrooms, undrained (4 oz)
  • 1 c
    burgundy or other dry red wine
  • 1/4 c
    soy sauce
  • 1 Tbsp
    brown sugar
  • 1 Tbsp
    olive oil
  • 1 tsp
    ground ginger
  • 1/4 tsp
    garlic powder
  • 1/4 tsp
    onion powder
  • 1/4 tsp
    dried whole oregano
  • hot cooked rice

How To Make baked chicken "coq au vin"

    Place the cut-up chicken in a 13 x 9 x 2 inch baking dish

    Drain mushrooms, reserving liquid. Add enough water to the liquid to equal 1/4 cup. Combine mushrooms, liquid, wine, and next 7 ingredients in a jar. Cover tightly and shake vigorously Pour the mushroom mixture over the chicken.
