I needed something to serve to a large group immediately following church and came up with this. I left it in the crock pot on low so it would stay warm and be ready to go when we got home. It was a huge success and is now a main staple in our household. We prepare many dishes using this as the base (baked tacos, deep fried tacos, enchiladas, chili, casseroles, etc.).

Ingredients For taco meat

  • 2 lb
    ground beef
  • 1
    onion, shredded or finely minced
  • lots of fresh finely chopped garlic
  • 1 Tbsp
    chili powder
  • 1 can
    refried beans (small)
  • 1 can
    rotel, drained
  • 1 c
    mexican blend shredded cheese

How To Make taco meat

    Brown ground beef with onion and LOTS of garlic.

    Drain.
  • 3
    Add chili powder, refried beans and drained Rotel.
  • 4
    Mix well and heat thoroughly.
  • 5
    Remove from heat and stir in cheese until melted.
