3 lbbeef bottom roast, boneless trimmed

1/4 cwater

1 cangreen chiles, diced and drained

1 canstewed tomatoes

2garlic cloves, minced

1 lgonion, chopped

How To Make southwestern simmered beef

1Cut meat into 2\" pieces.

2In a heavy 4 quart pot, brown meat in oil.

3Add onion and garlic; cook until soft.

4Sprinkle with flour; cook 2 minutes.

5Add remaining ingredients.

6Cover and simmer for 1 to 1 1/2 hours or more or until meat is tender.

7Stir occasionally and add additional water, if needed.

8To serve, garnish with a dollop of sour cream, if desired.
