We like Mexican, Tex Mex and many different kinds of foods at my house. My husband makes this sometimes when I'm subbing. It is easy and when I come home from school it is ready! He creates as he is cooking but most of the time the recipe always comes out to be a winner!

Ingredients For simple mexican casserole

  • 1 1/2 lb
    ground chuck
  • 1 can
    cream of mushroom soup
  • 1 can
    cream of chicken soup
  • 1 pkg
    shredded mexican cheese
  • 1/2 pkg
    corn tortilla chips
  • 1 can
    rotel tomatoes
  • 1/2
    onion to taste
  • taco seasoning package

How To Make simple mexican casserole

  • 1
    Brown meat in skillet, meanwhile in a large bowl combine all the soups, Rotel tomatoes. In a large casserole dish sprayed with non-stick spray spread 1/2 the bag of tortilla chips aroung the bottom. When meat is ready drain it. Stir in the soups and the remainder just pour over it.

    Bake 30-45 minutes 350 degrees. If you have chips left use the rest of it for dipping. Super easy!
