Quick and Easy not to mention tasty one skillet Mexi meal. About 30 minutes and one pan to clean up. Doesn't get better than this. Hope you enjoy.

Ingredients For one dish mexi skillet

  • 1 lb
    ground beef (i used ground chuck)
  • 1 lg
    onion, chopped
  • 1 lg
    green bell pepper, chopped
  • 1 clove
    garlic, minced
  • 1
    (14-oz) can black beans, drained and rinsed
  • 1 c
    red salsa
  • 1
    (10-oz) diced tomatoes with green chilis (rotel)
  • 2 c
    beef broth (can use water with 2 boullion cubes)
  • 1 c
    long grain white rice (not minute rice)
  • salt and pepper to taste
  • 1 tsp
    chili powder
  • 1 tsp
    cumin
  • 1 tsp
    paprika
  • 1/4 tsp
    cayenne pepper, optional for extra heat
  • 1 1/2 c
    cheddar cheese, shredded (or your choice of cheese)
  • sliced green onions for garnish

How To Make one dish mexi skillet

  • 1
    Brown beef in large skillet over med heat.

    Add onion, bell pepper and garlic; cook until tender.

    Add black beans, salsa, tomatoes w/chili peppers, beef stock, rice and seasonings; stir to combine.

    Bring to slow boil, reduce heat and simmer 15 to 20 minutes or until liquid has cooked off. Taste test to make sure rice is cooked and soft. If still undercooked, add 1/2 cup beef stock or water at a time and continue to simmer until rice is soft. Once rice is cooked to desired consistency remove from heat.

    Add 1 cup cheese; stir in. Top with remaining 1/2 cup cheese; cover to allow cheese to melt. Add green onions for garnish before serving.
