Ingredients For my grandmother's meatloaf

  • 2 lb
    ground beef/sirloin
  • 16 oz
    tomato paste
  • 1-2 large can
    tomato juice
  • 1-2
    stacks saltine crackers crushed
  • 1 lg
    onion chopped
  • 1 lg
    bell pepper chopped
  • 2-3
    eggs
  • 1-2 c
    instant oatmeal
  • 1 large bottle
    ketchup

How To Make my grandmother's meatloaf

    Heat oven to 350. Combine ground beef, chopped onion, chopped bell pepper, eggs and tomato paste. Mix well with hand.

    Add crushed crackers and oatmeal a little at a time. If too dry, add some tomato juice. Continue to mix.

    Form into 1-2 loaves and place in a deep pan that has been sprayed with nonstick cooking spray.

    Squirt Ketchup fairly heavily over top and sides and spread evenly.

    Pour remaining tomato juice around loaves. Carefully place pan in oven and bake for 1 hour to 1 hour 30 min.
