Ingredients For mexican polenta

  • 4 c
    corn meal
  • 2 can
    swanson chicken broth
  • 1 lb
    ground beef,turkey,chicken or pork.
  • 1 jar
    salsa,the chunkier the better.
  • 16 oz
    sour cream
  • 1 lb
    shredded cheddar or 3-cheese mexi-blend
  • 1 pkg
    taco seasoning mix
  • hot sauce (optional)

How To Make mexican polenta

  • 1
    In a saucepan, bring chicken broth to a boil. Add corn meal. Boil rapidly for 3 min. turn down heat,simmer for 15 min.

    Brown ground beef in a pan. When brown add taco seasoning mix. Add jar of salsa. Stir.

    When corn meal is thick enough to your liking spoon into bowl. Add some of the meat mixture on top. Sprinkle shredded cheese(generously). Top off with a spoonful of sour cream. Hot sauce to taste.
