How To Make mexican bean and beef pie
-
1Cook beef or ground turkey with garlic on skillet until beef is no longer pink then drain. (I usually add my garlic once the beef is starting to brown)
-
2In a bowl combine soup, 1-1/4 cups of picante sauce, cornstarch, and parsley. Add salt and pepper to your liking. Add meat.
-
3Fold beans and corn into mixture (sometimes I use 1 can of Black Beans and 1 can of corn, I've also made it with no corn using kidney and black beans).
-
4Stir in Cheese, and 1/2 cup scallions into the beef and bean mixture. Line pie plate with pie pastry; fill with bean and meat mixture. Top with remaining pastry and seal and flute the edges. Cut slits into the top of the crust.
-
5Bake at 425 degrees for 30-35 minutes until lightly browned. Serve with sour cream, picante sauce, green onions and olives.
