My ex boss, Annette, was the worst but her meatloaf made incredible leftovers. My rector's wife, Priscilla, graciously contributed her goop.

Ingredients For meat loaf with goop

  • FOR MEAT LOAF
  • 2 lb
    ground beef
  • 2 lg
    eggs, lightly beaten
  • 1 md
    onion, minced
  • 8 oz
    tomato sauce, small can
  • 6 Tbsp
    a-1 (any steak sauce will do)
  • 1 c
    bread crumbs, dry
  • 1
    carrot, shredded
  • 1/2 c
    whole milk
  • FOR GOOP
  • 1 c
    ketchup
  • 1 Tbsp
    yellow mustard
  • 1/2 c
    brown sugar, firmly packed
  • 1/4 tsp
    nutmeg (optional)
  • 3 or 4
    red potatoes, small, quartered (if surrounding meatloaf in step 1)

How To Make meat loaf with goop

    You may use either a large Zip Lok bag or a large bowl. I prefer bag so I don't have raw meat under my fingernails. Preheat oven to 350 and grease a Pyrex loaf pan. You may also use the loaf pan as a mold, and invert it onto a greased cookie sheet. You may ALSO use a 9 x 13 pan, and surround with chunks of potatoes.

    Preheat oven to 350 degrees. Prep pan of choice.

    Squish meat with beaten eggs.

    Add onion, carrot, milk, bread crumbs, A-1 steak sauce, tomato sauce. Mix thoroughly but lightly.

    Put mixture into greased pan of your choice.

    For goop, mix 1 cup ketchup with 1 to 2 tablespoons of mustard. Stir in brown sugar--NO BIG LUMPS. Add nutmeg if you like. (I don't.) Top meatloaf with goop.

    If you prefer mashed potatoes and gravy, instead of roasted potatoes, use your favorite recipe.
