I have been making this recipe since the early 80's. It's a good light, but filling zucchini lasagna. Try it and let me know how you like it. :)

Ingredients For gardener's lasagna

  • 1 3/4 lb
    zucchini, sliced thin lengthwise
  • 1 lb
    ground beef
  • 1 clove
    garlic, minced
  • 8 oz
    can tomato sauce 1 to 2 cans
  • 1 tsp
    salt
  • 2 tsp
    italian seasoning
  • 1 c
    small curd or low fat cottage cheese
  • 1
    egg, beaten
  • 1 Tbsp
    parsley
  • 1/2 c
    parmesan cheese
  • 2 c
    mozzarella cheese, grated
  • 1/4 c
    bread crumbs

How To Make gardener's lasagna

    Brown ground beef with garlic until cooked through. Drain off excess fat. Stir in tomato sauce, salt and Italian seasoning.

    Mix together cottage cheese, beaten egg and parsley. Set aside.

    Use a 11 3/4 x 7 1/2 x 1 3/4 inch baking dish. Alternate layers of sliced zucchini, cottage cheese mixture, ground beef, Parmesan cheese, mozzarella cheese and bread crumbs. Repeat till all ingredients are gone. Make 350°F for 45 minutes to 1 hour.
