This started as my Mom's recipe which I've tweaked over the years. When you have leftover mashed potatoes, it makes a quick and easy dinner. I change up the veggies depending on what is on hand. Sometimes I add corn instead of peas.

Ingredients For easy shepherd's pie

  • 1 1/2 lb
    ground beef
  • 2 lg
    carrots, finely chopped
  • 1 lg
    onion, finely chopped
  • 1/2 lb
    mushrooms, sliced
  • 1/2 c
    frozen peas
  • 2 pkg
    brown gravy powder
  • 1 c
    water
  • 3 c
    leftover mashed potatoes
  • 1/2 tsp
    paprika (for sprinkling)

How To Make easy shepherd's pie

    Preheat oven to 350 F. Brown ground beef, with onion, carrot and mushrooms. When beef is browned and veggies are almost cooked, add the gravy mix and water. Bring to a boil, stirring until gravy is thickened.

    Add peas and put mixture into a 2 quart casserole dish.

    Add leftover mashed potatoes over beef mixture. Sprinkle paprika on top and bake uncovered for 45 minutes.
