Ingredients For beef stewed in cranberry chutney

2 Tbspvegetable oil

1/8 tspcayenne pepper

1/4 tspcloves, ground

1/4 tspginger, ground

1/4 tspcinnamon

1 Tbsphoney
-
1 Tbspcider vinegar
-
1/2 cwalnuts, coarsely chopped

2 cfresh cranberries

1.25 cboiling water

1minced garlic clove
-
1stalk celery, chopped
-
1 lgchopped onion

1.5 lbbeef stew meat
-
1/2 craisins
How To Make beef stewed in cranberry chutney

1Heat oil in a large skillet.

2Add beef and brown on all sides.

3Add onions and celery and saute until golden brown.

4Add garlic and saute mixture 1 minute longer, stirring constantly. (Do not let garlic change color)

5Stir water into mixture, then add remaining ingredients.

6Cover and simmer for 1-1/4 hours, or until beef is tender and liquid is reduced to 1/3 to 1/2 cup.

7If pan juice gets too low during cooking, add a little hot water.

8Or, if pan juice does not reduce sufficiently, uncover skillet during last 30 minutes of cooking and stir often.

9Taste to correct seasonings.

10Stew goes well with brown rice.
