vegetarian banh mi

There is a very small hole-in-the-wall Vietnamese Deli on Spadina in Toronto that serves mostly banh mi. You can go in and it costs only a twonie (two Canadian dollars) for a delicious sandwich. Usually banh mi has meat in it, but this deli made a vegetarian adaptation with tofu. After I left Toronto, I missed that deli and that sandwich so much, that I've made my own adaptation of it.

Ingredients For vegetarian banh mi

  • 1 sm
    red onion, finely sliced
  • 1/2
    cucumber, seeded and julienned
  • 1
    large-ish carrot, shredded
  • 1 pkg
    firm tofu, cut into about 1 inch strips
  • 2 tsp
    chili garlic sauce
  • 2 sm
    limes, juice only
  • ~3/4 tsp
    salt and pepper (to taste, really)
  • ~2 tsp
    lemongrass powder
  • rocket
  • mayonnaise
  • small french baguettes
  • green chili pepper, seeded and sliced

How To Make vegetarian banh mi

    Mix together chili sauce, lime juice, and salt and pepper, then pour over vegetables and tofu. Sprinkle lemongrass powder over all and toss to mix. Let sit at least one hour to marinate (I leave mine overnight).

    In a frying pan over medium heat, heat all the filling ingredients just until hot.

    Spread mayonnaise (I used wasabi mayonnaise) on both sides of a french baguette. Place some rocket leaves inside the baguette, then spoon in the filling. Add green chili peppers according to your preference. Enjoy.
