  • 2 C. All purpose flour
  • 1 Tbsp. Baking powder
  • 1/4 tsp. Salt
  • 5 Egg whites
  • 3/4 C. Butter (or margarine)
  • 1 1/2 C. Sugar
  • 1 tsp. Vanilla
  • 1/4 tsp. Almond extract
  • 1 C. Milk
  • 1 C. Chopped, pitted dates (or figs)
  • 1/2 C. Raisins
  • 1/2 C. Chopped pecans
  • 1 Seven Minute Frosting recipe
  • 1 Lady Baltimore Filling recipe

How To Make lady baltimore cake

    Grease and lightly flour two 9 x 1 1/2 inch round baking pans. In a small mixing bowl stir together flour, baking powder, and salt. In a large mixing bowl bring egg whites to room temperature. Set pans, flour mixture, and egg whites aside. In a very large bowl beat butter (or margarine) with an electric mixer on medium to high speed about 30 seconds or until softened. Add sugar, vanilla, and almond extract; beat until combined. Alternately add flour mixture and milk, beating on low to medium speed after each addition just until combined. Wash beaters. Beat egg whites until stiff peaks form (tips stand straight); fold into batter. Spread batter into the prepared pans. Bake in a 350F oven for 30 to 35 minutes or until cake test done. Cool cakes in pans on wire rack for 10 minutes. Remove cakes and cool them completely on wire racks. Meanwhile, prepare the Seven Minute Frosting. Prepare Lady Baltimore Filling. Spread one cake layer with the filling. Then top with the second cake layer. Frost with the remaining Seven Minute Frosting. Store in the refrigerator. Seven Minute Frosting: Recipe located in this program Lady Baltimore Filling: Combine 1/4 of the Seven Minute Frosting (about 1 1/4 cups) with 1 cup chopped, pitted dates or figs, 1/2 cup raisins, and 1/2 cup chopped pecans. Makes 2 cups
