Years ago (so the legend goes) this recipe was created by the Chef of the Palace Hotel in honor of a close friend, who had just opened a restaurant of the same name.

Ingredients For green goddess dressing

  • 1 Clove garlic (peeled and halved)
  • 1/3 C Minced parsley
  • 1/3 C Minced chives
  • 1 Tbs Minced scallions
  • 1/4 C Minced fresh tarragon
  • 8 Anchovy fillets (rinsed, drained, and minced)
  • 3 C Mayonnaise
  • 1/3 C Tarragon vinegar

    Rub a small bowl well with cut sides of garlic; discard garlic. Add remaining ingredients and mix well; cover and chill 1 to 2 hours. Use to dress crisp green salads Dressing keeps well in refrigerator (about 1 week.
