This Iced Ginger Chai is heavy on the ginger, cardamom and black pepper which give it a real spark. It's not in the recipe but you may dilute the concentrate some if you wish. The long prep time is really just chilling.

Ingredients For iced ginger chai

2 qtpure water

1/2 cfinely chopped fresh ginger

10cardamon pods

5whole cloves
-
10whole peppercorns

1/2 tspfennel or anise seed

1/4 corganic loose rooibos tea (or your favorite tea)
How To Make iced ginger chai

1Place all ingredients in a pot and bring to boil

2Reduce and leave pot on stove with mixture at a simmer for 30 minutes

3Turn off heat; allow mixture to remain in (covered) pot overnight to continue steeping without heat

4Strain mixture into a 1 quart jar –you will have between 3-4 cups of chai concentrate

5Fill a glass with ice, 1 cup chai concentrate and ¼ cup almond milk (or milk of your choice)

6Add sugar (Splenda or honey) to taste (optional) and serve over ice with a smile.
