This Iced Ginger Chai is heavy on the ginger, cardamom and black pepper which give it a real spark. It's not in the recipe but you may dilute the concentrate some if you wish. The long prep time is really just chilling.

Ingredients For iced ginger chai

  • 2 qt
    pure water
  • 1/2 c
    finely chopped fresh ginger
  • 10
    cardamon pods
  • 5
    whole cloves
  • 10
    whole peppercorns
  • 1/2 tsp
    fennel or anise seed
  • 1/4 c
    organic loose rooibos tea (or your favorite tea)

How To Make iced ginger chai

  • 1
    Place all ingredients in a pot and bring to boil
  • 2
    Reduce and leave pot on stove with mixture at a simmer for 30 minutes
  • 3
    Turn off heat; allow mixture to remain in (covered) pot overnight to continue steeping without heat
  • 4
    Strain mixture into a 1 quart jar –you will have between 3-4 cups of chai concentrate
  • 5
    Fill a glass with ice, 1 cup chai concentrate and ¼ cup almond milk (or milk of your choice)
  • 6
    Add sugar (Splenda or honey) to taste (optional) and serve over ice with a smile.
