sticky toffee and chocolate pudding

We recently went to Vegas and ate at Gordon Ramsay steak restaurant. We had this amazing dessert called toffee pudding. I was expecting a pudding but it was more of a cake with a delicious toffee syrup over top. It was amazing. Here is a copy cat recipe for this amazing British dessert.

Ingredients For sticky toffee and chocolate pudding

  • 1 c
    dates pitted and chopped
  • 3/4 c
    dark brown sugar
  • 1 c
    water
  • 3 lg
    eggs
  • 1 1/4 c
    flour
  • 1/2 c
    butter softened
  • 3 Tbsp
    cocoa powder
  • 1 Tbsp
    strong coffee
  • 1 tsp
    each vanilla, baking soda, and baking powder
  • TOFFEE SAUCE
  • 1 c
    heavy cream
  • 1/2 c
    dark brown sugar
  • 1/3 c
    butter

How To Make sticky toffee and chocolate pudding

    Preheat oven 375 degrees. Spray 8 ramekins and place on baking sheet.

    Place the dates, sugar and water in a saucepan and simmer for 10 minutes. Cool and blend in food processor until smooth. Add the butter, vanilla, strong coffee, and eggs, whiz again until well blended.

    Place the mixture into a large mixing bowl. Sift the flour, cocoa powder, baking soda and baking powder into the wet mixture. Divide among the ramekins and bake 25 minutes until toothpick emerges clean when inserted in center.

    For the toffee sauce

    Put all ingredients in saucepan and simmer stirring frequently until the butter and sugar have dissolved.

    When the puddings are done but still warm run a small knife along the sides and invert onto individual serving plates. Pour toffee sauce over. Serve with whipped cream or vanilla ice cream
