This is another recipe I found in a old cookbook. I just love the name of this pie, makes me wonder if it got it name by ladies trying to keep flys off food back in the old days. I can just see some lady with her fan in hand swing it over a pie and telling flies to shoo.

Ingredients For shoofly pie

  • 1
    recipe plain pastry
  • 1 1/2 c
    sifted flour
  • 1 c
    brown sugar, firmly packed
  • 1/8 tsp
    salt
  • 1/4 c
    shortening
  • 1/2 tsp
    baking soda
  • 1/2 c
    hot water
  • 1/2 c
    molasses

How To Make shoofly pie

    Line 2 piepans with pastry.

    Make crumbs by combining flour, sugar, salt and shortening.

    Disslove soda in hot water and combine with molasses.

    Add 3/4 of crumbs, pour into pastry-lined pans and top with remaining crumbs,

    Bake in very hot oven (450 degrees) 10 minutes.

    Then reduce temperature to moderate (350 degrees) and bake 20 to 30 minutes longer or until firm. Makes 2 (9 inch) pies.
