lightly sweetened pecan pie

My Aunt share this recipe with me due to my family has a history of diabetes and were trying to watch out sugar intakes to avoid becoming one. We had a fantastic season this year and were blessed with Pecans. So we have made this lightly sweeten pecan pie alot since we have receive the recipe. It's so good, plus it's addictive too with each bite you take. We bake ours in a 13x9 pan because the crust is almost like the three ingredient cobblers. So their more than eight slices as you would get in a pie. It's hard to stop with just one serving,lol.

Ingredients For lightly sweetened pecan pie

  • 1 stick
    butter, softened
  • 1/2 c
    flour (self-rising)
  • 1/4 c
    sugar
  • 1/2 c
    milk
  • CRUST MIX
  • FILLING
  • 3
    eggs
  • 1/2 c
    sugar
  • 1/2 c
    light corn syrup
  • 1/8 tsp
    salt
  • 1 tsp
    vanilla flavoring extract
  • 1/4 c
    butter, melted
  • 1 c
    chopped pecans

How To Make lightly sweetened pecan pie

    Place 1 stick of softened butter into a small mixing bowl. Then add 1/2 c. of self rising flour,1/4 c. sugar and 1/2 of milk. Stir and mix well. Pour into a 13x9 baking pan lightly greased.

    For the filling; you will take 3 eggs at room tempature and mix 1/2 c. sugar in mixing bowl. Then add 1/2 c. light corn syrup. After blending well add 1/8 tsp.of salt, 1tsp. vanilla flavoring and a 1/4 c. melted butter. Stir well with a wooden spoon by hand. Then when blended well add 1 c. chopped pecans and mix throughly.

    Set oven to 350 degrees. Place 13x9 baking pan into oven after it reaches desired tempature and bake for 30 minutes. Take out and cool. Optional: Serve with Lite Cool Whip.
