Our family loves this pie and it is so easy.Microwaves are a lot more powerful than when Grace wrote 'Microwave Cooking My Way'so cook in intwervals of 8 minutes to thicken the juices and soften the apples.

Ingredients For grace wheeler's microwave french apple pie

5-6 cpeeled, sliced apples

3/4 csugar

1 tspcinnamon
-
1 tspgrated lemon rind (optional)

3 Tbspflour
-
baked pie shell
- TOPPING

1/3 cbutter or margarine
-
1/2 cbrown sugar (packed)

1/2 cflour
-
1 crolled oats
-
cinnamon to taste( 1/2 teaspoon or more)
How To Make grace wheeler's microwave french apple pie

1Put pie crust in a glass or ceramic pan,sprinkle with 1 tablespoon of flour before adding the filling.

2Stir 2 tablespoons of flour,sugar, cinnamon and lemon rind to mix. Stir cinnamon mixture into the apples to coat the fruit. Turn into the baked pie shell.

3For the Topping:mix brown sugar, flour and oats,cut in the butter or margarine til it resembles coarse meal,spread evenly over the apples and sprinkle the cinnamon over the topping to give a nice even color.

4Microwave on high power for 8 minutes rotating at 4 minutes(or use the turntable). The apples should be soft. If your juices aren't thick,microwave at 4 minute intervals on turntable until satisfactory.
