My sister-in-law used to make these when she worked in a tea room and the customers loved them.

Ingredients For muffin cheesecakes

  • 2 pkg
    cream cheese (8 oz.) (softened)
  • 3/4 c
    sugar
  • 2 lg
    eggs
  • 1 Tbsp
    lemon juice
  • 1 can
    cherry pie filling

How To Make muffin cheesecakes

  • 1
    Mix all ingredients together (except pie filling). Fill 18 muffin cups. Bake for 15 minutes at 375 degrees. Spoon the pie filling into them after they are filled and baked. You can also put vanilla wafers in the bottom of the muffin cups before you bake them - if you want.
