Pani Popo is a Samoan dessert that is sweet and very heavy. It literally means, "Buns in coconut milk". When my daughter was a brand new newlywed, my son-in-law asked if I knew what Pani Popo was and if I could make it. I told him that I heard of the dessert but didn't know how to make it. With his explanation of this dish, I didn't want to make buns from scratch but proceeded to do it my way. So I had a loaf of Sara Lee Pound cake in the freezer and so the story goes with my twist on this heavenly dessert. He loved it anyway and was just taken by how my creativity actually made something new and just as good. I now make this every year as part of our Christmas Menu - Dessert.

Ingredients For a twist on pani popo

    loaf, sara lee pound cake, sliced
  • 2 can
    coconut milk
  • 1 can
    sweetened condensed milk
  • 1/3 c
    cornstarch
  • 1 tsp
    vanilla extract

How To Make a twist on pani popo

    Slice up the pound cake and line the bottom of a 9 x 13 pan.

    In a medium saucepan, bring to a simmer, the coconut milk, sweetened condensed milk and vanilla extract. Bring to a boil and add the cornstarch, constantly stirring so that it doesn't burn, when it thickens, turn off the heat and remove the pan. Immediately pour the coconut mixture over the pound cake make sure that the coconut mixture saturates the pound cake over and under and the sides.

    Bake at 350 degrees for 25 minutes. Remove from the oven and serve hot. It also is great cold, it becomes more jello-like in consistency.
