I call this "Poor Man's Apple Crisp" When Zuccini is in season they are cheap to buy. Cheaper then apples. This recipe you can't tell the difference.

Ingredients For zuccini crisp

  • c
    4 cups of flour
  • tsp
    1 teaspoon salt
  • c
    1 3/4 cup sugar
  • stick
    3 sticks of margarine
  • tsp
    1 teaspoon cinnamon
  • c
    2/3 cups lemon juice
  • tsp
    1/4 teaspoon nutmeg
  • lg
    2 large zuccini's

How To Make zuccini crisp

  • 1
    Combine flour, salt, sugar, margarine, and cinnamon until crumbly. Set aside. Peel and remove seeds from zuccini to make 6 cups. I usually use 2 large zuccini's. Slice and place in sauce pan. Add 2/3 cup lemon juice, 1/4 teaspoon nutmeg, 3 tablespoon cinnamon, 3 teaspoon sugar, cook until tender. Set aside. Take 1/2 of crumb mixture set aside. Put remaining crumb mixture in 9x12 and press it up the sides of the pan. Take zuccini and lay mixture over crumbs. Take remaining crumb mixture and place on top and sprinkle with cinnamon. Bake 30-40 minutes at 350 degrees * This can be served either warm or cold and also a touch of whip cream or vanilla ice cream on top. "YUM-YUM"
