I was just fooling around one day and this recipe came to mind. It is light-'n' easy summer dessert. I serve it with a dollop of whipped cream atop each square. I think you will enjoy this as I do.

Ingredients For zelda's frosted strawberry squares

  • 2 c
    graham crackers, crushed or crumbs ( i prefer the crumbs)
  • 1/2 c
    chopped nuts, any kind, optional
  • 1/2 c
    butter, melted
  • 2 lg
    egg whites
  • 2/3 c
    sugar
  • 3 c
    fresh strawberries or 2 cups frozen berries
  • 2 Tbsp
    lemon juice
  • 1 c
    cream, whipped or cheat and use small carton of cool whip

How To Make zelda's frosted strawberry squares

    Mix together graham cracker crumbs, nuts if you want them, and butter, and spread evenly over your cookie sheet. Bake at 350 degrees for 10 minutes. Stir occasionally. Sprinkle two-thirds of these crumbs in greased 9x13 pan. Combine egg whites, sugar, strawberries, and lemon juice in large bowl. Beat at high speed until stiff peaks form. Fold in whipped cream. Spoon over crumbs. Sprinkle remaining crumbs over top. FREEZE 6 Hours or overnight. Cut into squares. It won't last very long.
