I pinched this recipe from Jamie Oliver! It appeared on one of my online magazines. It has become a firm favourite for friends and family who love cheesecake! The best part of this cheesecake, besides eating it, is the lovely way it can be presented for eating or as giving to someone as a foodie gift! Decorate it according to the ocassion and you cannot go wrong - and its a way of recycling your used glass jars!

Ingredients For cheesecake in a jar

  • 1 c
    cracker crumbs
  • 1 Tbsp
    sugar
  • 2 Tbsp
    melted butter
  • 250 g
    cream cheese
  • 400 g
    condensed milk
  • 1/2 tsp
    lemon juice (fresh or bottled)
  • 3 c
    cherry filling (see recipe)
  • jars with lids
  • ribbons, flowers or other decorations
  • CHERRY FILLING
  • 5 or 6 c
    pitted fresh cherries
  • 1/2 c
    water
  • 1 1/4 c
    granulated sugar
  • 4 Tbsp
    cornstarch

How To Make cheesecake in a jar

    Throw crackers into a food processor and crush into crumbs (or crush in a packet with rolling pin) Add sugar and melted butter and combine well

    In a stand mixer or a bowl - mix the cream cheese until smooth. Scrape the bottom with a spatula. Add the condensed milk while you continue to beat the mixture

    Once it is all added beat for about 3 minutes, or until smooth and silky. You may You may need to scrape the bottom of the bowl again to be sure all of the cream cheese is getting incorporated. 5.

    Add your lemon juice. Mix for 1 more minute to be sure everything is combined nicely. Be Sure your jars are nice and clean

    Layer about 2 tsp of the graham cracker mixture. Then about 2 Tblsp of the cream cheese mixture. Layer about 2 Tblsp of cherry pie filling (see recipe below) over the cream cheese mixture.

    Spray in a bit of Orley whip or cream, and smooth it out with a spoon. Then repeat the layers again. Put on the lids and rings.

    To attach the cards, simply punch two holes in the top of each card. Wrap the ribbon around the lid of the jar and through the two holes. Tie a lovely bow and hot glue the flowers on tops. Voila - A great Christmas gift. Refrigerate until you are ready to deliver them. Also, they will stay good for a few days if you need to make them ahead.

    CHERRY PIE FILLING: Preparation:In a saucepan, combine cherries with remaining ingredients. Bring to a boil; reduce heat to low and cook, stirring frequently, for about 10 minutes. Cool slightly before using to fill
