How To Make mama jackson's sweet potato pie

Cook potato(es) until soft. Mash or puree in a food processor until completely smooth. Add melted butter.

Combine dry ingredients in large bowl. Add all ingredients except vanilla and egg whites and mix on medium speed with blender for 1 1/2 minutes or until well blended.

Add vanilla and mix 30 seconds. Fold in egg whites and then pour into two pie crusts.

Bake 55 to 60 minutes at 350 degrees.
