pretty pink peppermint marshmallow ice cream

One of my friends that I graduated with from High School has a birthday; but this year she isn't able to go out to eat to celebrate her special day, because she has a husband who is not doing well health-wise. I decided to make her a sweet treat & take to her. I love, love, love developing ice creams -as you may know if you have read my previous posts. I thought I would develop a Peppermint Marshmallow Ice Cream for her and her husband -and make Brownies for them to enjoy with the ice cream. Peppermint Marshmallow Ice Cream & Brownies -YUM! YUM! I hope you make & enjoy it too!

Ingredients For pretty pink peppermint marshmallow ice cream

  • 1 1/2 c
    crushed peppermint candies
  • 1 pt
    half and half
  • 1 pt
    heavy whipping cream
  • 1 bag
    mini marshmallows, melted *
  • 1/2 c
    sugar
  • 1/4 tsp
    salt
  • 1/4 tsp
    peppermint extract

How To Make pretty pink peppermint marshmallow ice cream

    Gather and measure out the ingredients for the ice cream recipe.

    Crush the peppermint candies.
  • 3
    Place the marshmallows and 3 Tablespoons of the Half and Half in the top of a double boiler (OR a large glass bowl set over a pan of simmering water.). Melt the marshmallows with the milk; stirring often.

    Remove from the heat and add the remaining Half and Half, sugar, salt and peppermint extract.

    Stir in the crushed candies. Set aside to cool.

    With an electric mixer, whip the Whipping Cream until soft peaks form (about 2 minutes). NOTE: I put the beaters and bowl in the freezer as I get the rest of the ingredients together. The whipped cream whips better and quicker when the beaters and bowl are cold.

    Gently, fold the whipped Whipping Cream into the rest of the ingredients.

    Pour mixture into a 2 quart freezer-safe container or a 9x5-inch loaf pan.

    Cover and freeze until firm. Or you can leave in the freezer overnight. NOTE: The longer you leave it in the freezer, the firmer it gets.

    Have a bowl of this yummy treat! NOTE: This ice cream is also delicious as an Ice Cream Sandwich by putting the ice cream between two "Crispy and Crunch Chocolate Cookies". See recipe I preciously posted (I got from JoyofBakingcom.) ENJOY!!!!!
