Ingredients For gram's famous peach cobbler

  • FILLING:
  • 1/2 c
    sugar
  • 1 Tbsp
    cornstarch
  • 1/4 tsp
    cinnamon
  • 4 c
    peeled, sliced fresh peaches (about 6)
  • 2 tsp
    fresh lemon juice
  • BATTER:
  • 1 c
    all purpose flour
  • 2 Tbsp
    sugar
  • 1 1/2 tsp
    baking powder
  • 1/4 tsp
    nutmeg
  • 1 dash
    salt
  • 3 Tbsp
    butter
  • 1/2 c
    light cream or half-and-half
  • 1/2 tsp
    vanilla extract
  • TOPPING
  • 1 Tbsp
    butter, melted and cooled
  • 1 1/2 tsp
    sugar

How To Make gram's famous peach cobbler

    For filling: combine sugar, cornstarch and cinnamon in a large saucepan. Stir in peaches and lemon juice. Bring to a boil over medium heat, stirring frequently. Boil and stir for 1 minute. Pour into a 2-quart greased baking dish.

    For batter: combine flour, sugar, baking powder, nutmeg and salt. Using a pastry blender or 2 knives, cut in butter until crumbly. Stir in light cream and vanilla just until moistened. Drop by spoonfuls onto filling.

    For topping: brush batter with butter. Sprinkle sugar on top. Bake, uncovered, in a preheated 400 degree oven, for 25 to 30 minutes, or until golden brown. Serve with ice cream, if desired.
