This recipe was given to me by a saint in my church, Ms. Josie. She made these cookies every Easter & tried to teach willing volunteers to learn how to make them to keep the tradition alive. And there were special instruction to follow:

Ingredients For resurrection cookies

  • 1 cup
    whole pecans(broken in pieces in ziploc bag)
  • 3
    egg whites
  • 1 cup
    granulated sugar
  • 1 tsp
    vinegar
  • pinch
    salt

How To Make resurrection cookies

    1. Break pecans into smaller pieces in the Ziploc bag using back of a wooden spoon. This symbolizes how Jesus was beaten by the soldiers at Calvary. 2.Beat egg while until they make stiff peaks, incorporating the cup of sugar, the vinegar, and the salt.(You may need to beat 11-14 min to get stiff peaks) This symbolizes the sponge filled with bitter vinegar that was offered to Jesus while he was on the cross.

    3. Fold in nuts (gently). Drop by teaspoons onto parchment paper on baking pan into preheated oven at 300 degrees. Close the door as Jesus tomb was sealed by a large boulder and guards took watch to prevent his followers from removing his body. Guards were placed at the sealed tomb to assure that no one could get into the tomb. Now turn off the oven and tape it shut until morning.

    *You will find an "empty tomb" when you open the oven door after 8-9 hrs. Enjoy your crispy hollow, sweet, crunchy nut morsels. I hope you & your children enjoy this activity together.
