Ingredients For milk chocolate-peanut butter sandwich cookies

  • ***COOKIES***
  • 1 3/4 c
    all purpose flour
  • 1 tsp
    baking powder
  • 1/2 tsp
    baking soda
  • 1/2 tsp
    coarse kosher salt
  • 1/2 + 1/3 c
    powdered sugar
  • 1 1/3 c
    milk chocolate chips
  • 1/2cup + 1 Tbsp
    dark brown sugar, packed
  • 6 Tbsp
    butter, softened
  • 1/2 c
    peanut butter, creamy
  • 1/2 c
    vegetable oil
  • 1 lg
    egg
  • 1 1/2 tsp
    vanilla extract
  • ***FILLING***
  • 3 oz
    high quality cmilk chocolate bar
  • 1/4 c
    peanut butter, creamy
  • 6 Tbsp
    whipping cream
  • 2 Tbsp
    powdered sugar
  • 1/2 tsp
    salt
  • ***PREHEAT OVEN TO 350 DEGREES***

How To Make milk chocolate-peanut butter sandwich cookies

    FILLING-- Place chocolate bar, peanut butter, sugar and salt in a medium bowl. Bring whipping cream to a light boil in a medium sauce pan. Pour whipping cream over chocolate mixture stirring well until smooth. Chill in refrigerator for 1 hour until thick and spreadable.

    COOKIES--Using an electric mixer, cream butter and both sugars until blended. Add peanut butter mixing until creamy. Gradually beat in oil, vanilla then the egg.

    In medium bowl, whisk, flour, baking soda, baking powder and salt. Gradually add to creamed mixture until just blended. Stir in chocolate chips.

    Drop by teaspoonfuls onto cookie sheet. Bake for 12-15 minutes. Let sit a few minutes on cookie sheet before transferring to a cooling rack. Let cool completely.

    ASSEMBLY--Spread 1 teaspoonful of filling onto flat side of cookie. Top with another cookie. Store in airtight container.
