When I was still living in Iowa during the 70s, I saw these made on a local cooking show, and I've been making them ever since. We used to call them "Cuppa Cookies" because they contained just about a cup of everything! These are a hit wherever I take them. Prep time: Approximately 40 minutes to make the dough. Refrigerate time: 2-3 hours or overnight. Bake time: 7 minutes or more depending on the heat of your oven. Oatmeal: Old Fashioned Oats, not instant

Ingredients For delicious cookies

    canola oil
  • 1 c
    brown sugar, firmly packed
  • 1
    egg
  • 1/2 tsp
    butter flavoring
  • 1 tsp
    cinnamon
  • 1 tsp
    cream of tartar
  • 1 c
    rice krispies cereal
  • 1 c
    sweetened coconut
  • 1 c
    butter
  • 1 c
    sugar
  • 2 tsp
    vanilla
  • 1 tsp
    salt
  • 1 c
    oatmeal, uncooked
  • 2 c
    semi-sweet chocolate chips
  • 2 1/2 c
    all purpose flour
  • 1 tsp
    soda
  • small bowl of sugar for topping the cookies

How To Make delicious cookies

    In the bowl of a stand mixer, combine all the ingredients using the paddle attachment. Beat until well combined.

    Cover the mixing bowl with plastic wrap and refrigerate 2-3 hours or overnight.

    When you are ready to bake, preheat the oven to 350 degrees F.

    Take the cookie dough out of the refrigerator.

    Drop by teaspoon on a cookie sheet/tin. Using a small cookie scoop is a great way to make sure your cookies are uniform. I tried one of these for the first time at Christmas, and it worked really well.

    Take a flat-bottomed glass and dip it in a small bowl of sugar.

    Lightly press the cookie dough with the sugar-coated glass. You don't want to flatten the cookies too much or they will really spread when you bake them.

    Re-cover the cookie dough with plastic wrap and put back in the refrigerator until you are ready to put the next batch onto a cookie sheet. This prevents the cookies from spreading too much while baking as it keeps the butter cold.

    Bake for seven minutes or until the tops start to brown. Cooking time will depend on how hot your oven is. Watch the first batch and then follow that cooking time with the rest of the cookies.

    Remove the cookies from the oven and place on a cooling rack.

    Store in an airtight container. Cookies will stay fresh up to a week.
