butterscotch peanut butter bars

Had these at a friends house and loved them. Easy to make and packed with flavor. Would make a good bake sale item or packaged in cellophane for gift giving.

Ingredients For butterscotch peanut butter bars

  • 1 stick
    butter, room temperature
  • 1/2 c
    granulated sugar
  • 1/2 c
    packed brown sugar
  • 1/2 c
    creamy peanut butter
  • 1/4 c
    creamy peanut butter
  • 1 lg
    egg
  • 1 tsp
    vanilla extract
  • 1 c
    all purpose flour
  • 1 tsp
    baking soda
  • 1/4 tsp
    salt
  • 1/2 c
    quick oats
  • 1 c
    butterscotch chips
  • 1 c
    confectioners sugar
  • 3-4 Tbsp
    milk

How To Make butterscotch peanut butter bars

    Heat oven to 350 degrees. Grease 9x13 pan with butter

    Using electric mixer, cream butter, granulated sugar, brown sugar and 1/2 cup of the peanut butter.

    Add the egg and vanilla and mix well.

    Sift flour, baking soda and salt together. Add the oatmeal to this mixture.

    Mix the flour mixture into the creamed mixture until well blended.

    Spread batter into prepared baking pan. Sprinkle with the butterscotch chips.

    Bake 20-25 minutes or until browned.

    Whisk confectioners' sugar, milk and remaining 1/4 cup peanut butter until smooth. Spread glaze evenly over warm bars. Cool completely before cutting.
