lemon juice

coconut rum

Preheat oven to 375* As soon as cupcakes are in the oven, reduce heat to 350* Bake at 350* for 15-20 minutes Lightly brown; Toothpick test should be clean

Puree strawberries and coconut rum Melt butter Combine milk and lemon juice

Combine cake mix and all ingredients except strawberry puree and grated coconut; Beat on medium until combined. Add strawberry puree and beat on medium for 2 minutes; no more

IF grated coconut is desired, fold into batter just before transferring to cupcake liners
