This is one of the best red velvet cakes I have ever had and my family loves it!!! Worth the time and effort, but is not hard to do!!! My son is very picky and he has fell in love with it!!! It brings so many memories back from when my mom made it!!!

Ingredients For red velvet cake

  • 2 1/2 c
    self rising flour
  • 1 tsp
    baking soda
  • 1 1/2 c
    sugar
  • 1 1/2 c
    vegetable oil
  • 2 lg
    eggs
  • 1 tsp
    white vinegar
  • 1 tsp
    vanilla
  • 1 c
    whole buttermilk
  • 2 1/2 Tbsp
    red food coloring
  • FROSTING
  • 8 oz
    cream cheese
  • 1 stick
    margarine
  • 1 lb. box
    confectioners' sugar
  • 1 c
    finely chopped pecans
  • 1 tsp
    vanilla

How To Make red velvet cake

    In a medium bowl, sift together flour and baking soda. Set aside. In mixer, combine sugar, oil, lightly beaten eggs, vinegar and vanilla. Beat until light and fluffy, about 2 minutes. Gradually add flour mixture and mix on low speed just until the flour has been incorporated. Slowly add buttermilk. Add food coloring to mix and mix until coloring is evenly distributed. Grease and flour 3 9-inch pans and divide batter evenly between three pans and bake in 325 oven for 17 minutes. (My mom said 28 minutes at 350 but that was to much for my gas oven) It was perfect my way!!!

    Frosting: Bring cream cheese and margarine to room temperature. Put in mixer and beat well. Add sugar and vanilla and beat until light and fluffy. Add pecans and blend well. Spread on cooled cake layers, sides and top. Delicious!!! Makes a really tall cake!!!
