This is my husband's grandmother's (Minnie McCoy Whitehead) recipe for Lane cake It came from her mother,but we don't know her name they are direct descendants form the Hatfields and McCoys,she was born in 1899 in West Virginia. We have been trying to find this recipe in my mother-in-laws cookbooks and her recipe box. She was bad about sticking stuff every where.My sister-in-law found it in her mother's Bible at church this morning. My MIL passed in 1992, and she just found it

Ingredients For lane cake

1 1/2 cbutter
-
4 csugar
-
3 1/2 cflour sifted
-
3 tspbaking powder
-
1 cmilk
-
2 tspvanilla extract
-
2 tsp8 eggs separated
-
1 craisins chopped
-
1 cnuts chopped your choice
-
1 ccoconut
-
1 cwine or bourbon
How To Make lane cake

1CAKE:
-
2cream one cup butter and 2 cups sugar together until fluffy and light

3sift flour with baking powder
-
4add flour mixture with creamed mixture alternately with milk mixing on med, add one tsp. vanilla
-
5beat egg whites until stiff. fold into cake batter,DO NOT STIR FOLD

6spread into cake pans evenly

7grease and flour 3 - 9" cake pans. Bake on 350 20-30 min until springs back and golden brown

8use half of wine or bourbon on cake layers,brush each layer after stacking.

9FILLING

10beat egg yolks slightly. add remaining sugar and butter,

11cook in double boiler until thick,stirring constantly. add raisins,nuts,and coconut.stir in remaining vanilla and wine

12spread filling thickly between layers of cake and on top and sides.

13she would wrap the cake in 2-3 layers of tin foil and refregirate for 3 days before serveing,you didn't dare try to look at it. so,so good
