Voted best new dish of the year by my boyfriend. This coffee cake is sweet, easy and delicious! Adapted from a Betty Crocker recipe.

  • TOPPING
  • 1/2 c
    sugar
  • 1/3 c
    all purpose flour
  • 3/4 tsp
    cinnamon, ground
  • 1/2 stick
    butter
  • CAKE:
  • 2 c
    all purpose flour
  • 3/4 c
    sugar
  • 1/4 c
    shortening or butter, softened
  • 3/4 c
    milk
  • 1
    egg
  • 2 1/2 tsp
    baking powder
  • 1/2 tsp
    salt
  • 1 1/2 - 2 c
    fresh blueberies
  • GLAZE:
  • 1/2 c
    powdered sugar
  • 1/4 tsp
    vanilla extract
  • 2 tsp
    hot water
  • 1/4 tsp
    lemon rind, grated

How To Make ellen's smokin' blueberry coffee cake

    In a small bowl, mix 1/2 cup sugar, 1/3 cup flour and the cinnamon. Cut in the butter with a fork until crumbly. Set aside.

    In a large bowl, stir together all coffee cake ingredients except blueberries; beat with a spoon for 30 seconds. Fold in blueberries. Spread batter into a greased 9" square pan. Sprinkle with topping.

    Bake in a preheated 375-degree oven on center rack for 45 to 50 minutes or until toothpick inserted in center of cake comes out clean. Cool 10 minutes.

    In a small bowl, mix all glaze ingredients until smooth and thin enough to drizzle. Drizzle over warm coffee cake.
