easy peach upside-down coffee cake

The original recipe I got from our church cookbook, it called for a homemade crust, I made it easier to make w/ the cookie crust.

Ingredients For easy peach upside-down coffee cake

  • 1 pkg
    refrigerated sugar cookie dough
  • 1/4 c
    butter
  • 1/3 c
    light brown sugar
  • 1/2 tsp
    cinnamon
  • 1-1/2 tsp
    frozen, sliced peaches, like doles, thawed
  • 2 tsp
    baking powder
  • 2 lg
    eggs
  • 1/2 c
    light cream
  • 2/3 c
    peach preserves
  • 3 Tbsp
    orange juice
  • 1/3 c
    chopped pecans

How To Make easy peach upside-down coffee cake

    Open pkg of cookie dough and let soften 5 mins. Heat oven to 350. Spray a 10" springform pan w/cooking spray. In skillet, over medium heat, melt butter. Stir in brown sugar and cinnamon. Add peaches and cook 6 mins, stirring occasionally.

    Spoon mix into bottom of pan. In lg bowl, break up cookie dough w/ hands. Add baking powder and eggs, beat w/ mixer until blended. Beat in light cream until smooth.

    Pour mix over peaches. Bake 40 mins. Place a plat over top of pan and flip over. Let cool. In microwave bowl, microwave presreves and orange juice. Drizzle over cake. Sprinkle w/ pecans.
