When I take this cake to Church, I have to make two, as everyone always fights over the last piece...so I learned my lesson long ago...double the pleasure works best...enjoy!

Ingredients For easiest apple cake

  • 2 c
    sugar
  • 1 c
    oil
  • 3
    eggs
  • 2 tsp
    vanilla extract
  • 3 c
    peeled and cubed apples - i use granny smith
  • 1 tsp
    baking soda
  • 1 tsp
    cinnamon
  • 1 tsp
    salt
  • 2 c
    flour
  • handful
    chopped pecans - optional
  • SAUCE
  • 1/2 c
    unsalted butter
  • 1 c
    brown sugar, packed
  • 1/3 c
    heavy cream or milk

How To Make easiest apple cake

    Preheat your oven to 350 degree F. In a large bowl, beat sugar, oil, vanilla and eggs until well blended..I do this all by hand with a whisk.

    Add the flour, salt, baking soda and cinnamon. Beat until well blended ( batter will be thick.)

    Fold in nuts and apple.

    Spray a 9 x 13 baking pan or dish with bakers secret or grease and flour. Spread batter into pan evenly. Bake for 55 - 60 minutes. Cool completely.

    Make caramel glaze: In a saucepan, add butter, brown sugar, cream or milk. Cook over medium heat, stir continuously, until the mixture comes to a boil. DO NOT stir for 3 - 3 1/2 minutes. Remove from the heat and spread over the top of the cake. ( I line a cookie sheet with foil and remove my cake, for easier serving and so the caramel can run down the sides.) Leave the cake sit for at least an hour before serving.
