A wonderful dessert to take to a potluck. Or, serve to your Valentine. I derived this recipe from my friend Linda, although I tweaked it somewhat to my liking. Enjoy!

Ingredients For ~ cherry cheesecake dessert ~

  • 1 - 16.5 oz
    yellow cake mix / reserve 3/4 cup
  • 1
    egg
  • 2 - 3 Tbsp
    vegetable oil - enough to be able to press out into pan
  • 2 - 8 oz
    cream cheese - softened
  • 1/2 c
    sugar
  • 3
    eggs
  • 3 Tbsp
    lemon juice
  • 1 1/4 c
    milk
  • 1 tsp
    vanilla
  • 1 lg
    can - cherry pie filling ( i use two )

How To Make ~ cherry cheesecake dessert ~

    Preheat oven to 300 degree F. In a medium sized bowl, combine cake mix ( after reserving 3/4 cup ) with 1 egg and oil. Press into bottom and somewhat up the sides of a 9 x 13 baking dish. Set aside.

    In a large bowl, with hand mixer, blend cream cheese with 1/2 cup sugar.

    Add eggs and reserved 3/4 cup cake mix. Beat until smooth.

    Add milk, lemon juice and vanilla. Blend well, make sure you scrape the sides of the bowl.

    Pour evenly into prepared crust. Bake for 50 - 55 minutes or until set and beginning to become golden around edges.

    Spread on the cherry topping and refrigerate until chilled and ready to serve. I also add a dollop of whipped cream to each individual piece.
