My mother loved this cake. The recipe had been given to her by her friend Bea in 1937. Frost it with cream cheese frosting like my mother did. You'll love it, too! I promise!

  • 1 1/2 c
    sugar
  • 3/4 c
    butter
  • 3
    egg yolks, reserve whites
  • 2 1/2 c
    flour
  • 1 tsp
    cinnamon
  • 1 tsp
    ground cloves
  • 1 tsp
    ground allspice
  • 1 tsp
    baking soda
  • 1 c
    buttermilk
  • 1 tsp
    vanilla
  • 1 c
    cooked prunes, drained and chopped
  • 3
    egg whites

How To Make bea's 1937 spice cake

    Preheat oven to 350°. Combine flour, cinnamon, cloves, allspice, and baking soda. Set aside.

    Cream together sugar, butter, egg yolks, and vanilla until very light and fluffy.

    Gradually add dry ingredients to butter and egg mixture alternately with buttermilk, beginning and ending with dry ingredients.

    Beat egg whites until fluffy and moderately dry and fold into batter.

    Pour batter into greased and floured layer cake pans. Bake about 40 minutes or until a toothpick inserted in center comes out dry. Turn out on racks to cool. Fill and frost with buttercream or cream cheese frosting.
