applesauce gingerbread cake

My first MIL used to make this cake. I adored it served with a dollop of softly whipped cream. She passed away more than 35 years ago but I think of her every time I make this or one of her other recipes. Loved that lady!

Ingredients For applesauce gingerbread cake

  • 1/2 c
    sugar
  • 1 1/4 c
    flour
  • 1 tsp
    ground ginger
  • 1/4 tsp
    cinnamon
  • 1 1/2 tsp
    salt
  • 1/2 c
    molasses
  • 1/2 c
    neutral oil
  • 1
    egg
  • 1/2 c
    applesauce
  • 1 tsp
    baking soda
  • 1/2 c
    boiling water

How To Make applesauce gingerbread cake

    Combine dry ingredients
  • 2
    add molasses, oil, egg and applesauce. Blend well
  • 3
    Add soda to boiling water and mix immediately in to the rest of the ingredients. Pour in to an 8" x 8*' greased pan. Bake at 350 45 - 50 minutes

    Optional Glaze: 1 cup icing sugar, 1 tbsp lemon juice. Mix and pour over cake while warm
