soft zucchini cookies

I got this from my friend, Janet Lund, whom I worked with at NAC in Salt Lake City, Utah. She brought them to work one day and I fell in love with them and asked for the recipe. I made them again a few months ago and fell back in love with them. They are very soft and they kind of sneak up on you... eating one, then another, because after you have one, you just want another one!! Enjoy

Ingredients For soft zucchini cookies

  • CREAM TOGETHER IN A BOWL:
  • 1 c
    sugar
  • 1/2 c
    softened butter
  • 1
    beaten egg
  • SIFT DRY INGREDIENTS
  • 2 c
    flour
  • 1 tsp
    baking soda
  • 1/2 tsp
    salt
  • 1/2 tsp
    cloves
  • 1 tsp
    cinnamon
  • ADD:
  • 1 c
    grated zucchini
  • 1 c
    raisins
  • 1/2 c
    chopped walnuts

How To Make soft zucchini cookies

  • 1
    CREAM sugar, butter, & egg till creamy
  • 2
    SIFT dry ingredients together and add to mixture

    ADD zucchini, raisins, nuts; blend well

    DROP by rounded teaspoonfuls on greased cookie sheet

    BAKE 375 F for 12-25 min or until done

    DON'T OVER BAKE -- These are soft cookies

    In searching for just the right picture for these, I did not really find one that is exact. And I noticed that other people add chocolate chips and oatmeal to their recipes. I think they are perfect the way they are. I don't think those things are needed, but that is up the individual. Enjoy!
