These cookie bars will satisfy even the pickiest eater who doesn't like vegetables- no need to tell them they are made with green beans. Great made with other cooked veggies too! Try with cooked beets- makes red bars for Valentines Day.

Ingredients For sneaky cookie bars

  • 1 1/4 c
    whole wheat flour
  • 1/3 c
    non fat dry milk powder
  • 1/2 c
    honey
  • 1 tsp
    baking soda
  • 1 tsp
    cinnamon
  • 1/2 tsp
    each nutmeg, cloves and salt
  • 1 lg
    egg
  • 1/2 c
    each vegetable oil and applesauce
  • 2 c
    cooked green or yellow wax beans (16 oz. can of either one))
  • 3/4 c
    chopped walnuts
  • 1/2 c
    currants, or raisins or cranberries
  • 2 Tbsp
    powdered sugar

How To Make sneaky cookie bars

  • 1
    Sift together the first 8 ingredients in mixing bowl until blended. Place egg, oil, applesauce and beans in blender; blend until smooth. Pour over dry ingredients; mix well. Stir in nuts and raisins. Pour into greased 8x12 inch pan. Bake at 350^ for 25 to 30 minutes. Sprinkle with powdered sugar when slightly warm. Cut into bars. --- Note: If desired make a thin powdered sugar and lemon icing and drizzle over top. (I use this method).
