roni's cranberry-white chocolate oatmeal cookies

I have checked out different cranberry-white chocolate cookie recipes and haven't found one I liked, so I took my Granny's Oatmeal-Raisin Cookie recipe and used cranberrys and white chocolate morsels instead of the raisins. My friends love them!

Ingredients For roni's cranberry-white chocolate oatmeal cookies

  • 1 c
    butter-flavored crisco
  • 1 c
    white sugar
  • 1 c
    brown sugar, firmly packed
  • 2 lg
    eggs
  • 1 tsp
    vanilla extract
  • 1 1/2 c
    unbleached white flour
  • 1 tsp
    baking powder
  • 1 tsp
    salt
  • 3/4 tsp
    cinnamon, ground
  • 1/4 tsp
    nutmeg, ground
  • 3 c
    oats, quick cooking
  • 2/3 c
    dried cranberries
  • 2/3 c
    vanilla or white chocolate chips

How To Make roni's cranberry-white chocolate oatmeal cookies

    Preheat oven to 350 degrees.

    Combine eggs, crisco, white and brown sugars and vanilla with an electric mixer at medium speed until well blended.

    In a seperate bowl, combine flour, baking powder, salt and spices. Slowly add to creamed mixture and stir with a wooden spoon. Add oats; stir. Add cranberries and chocolate chips and stir again. Roll into walnut-sized balls, coat with white sugar and flatten slightly with a fork.

    Bake cookies for 10-12 minutes or until slightly brown around the edges. Cool on cookie sheet for 1/2 minute. Remove to wire rack to cool completely.
