peanut butter cookies

Always a big hit at our house. I think they are my favorite. Rolling the tops in sugar keeps the cookies from sticking to the fork or thumb when flattening. I use the thumbprint when I want to put a Hershey's kiss as a topper for special occasions. Either way they are sure to be a big hit with the family.

Ingredients For peanut butter cookies

  • 1/2 c
    granulated sugar
  • 1/2 c
    brown sugar, firmly packed
  • 1/2 c
    peanut butter
  • 1/4 c
    shortening
  • 1/4 c
    butter or margarine, softened
  • 1 lg
    egg
  • 1 1/4 c
    flour
  • 3/4 tsp
    baking soda
  • 1/2 tsp
    baking powder
  • 1/4 tsp
    salt

How To Make peanut butter cookies

  • 1
    Mix sugars, peanut butter, shortening, butter, eggs til creamy.

    Stir in remaining ingredients.

    Refrigerate for 2 hours until firm

    Form into walnut sized balls and roll tops in sugar. Flatten with fork in traditional pattern or press thumbprint.

    Bake at 375 degrees for 9-10 minutes.

    Remove from oven and allow to cool slightly. Remove from cookie sheet to rack or parchment paper to cool. Add Hershey's kiss if desired.
