This recipe has been a favorite in my family since I was a child...a long time ago! The original recipe was called Special K drop cookies, but when my kids were little, they could never remember all of that, so they started asking for "that peanut butter stuff you make." From that time on, Peanut Butter Stuff meant the Special K drop cookies with a few alterations. I changed the cereal to Rice Krispies, and I usually make them as a bar cookie instead of dropping by teaspoonful. Either way, they remain a favorite, take less than 10 minutes to make and are a favorite for pot lucks.

Ingredients For peanut butter bars

  • 1/2 c
    sugar
  • 1/2 c
    light corn syrup
  • 1/8 tsp
    salt
  • 3/4 c
    peanut butter, crunchy
  • 2 c
    crisped rice cereal

How To Make peanut butter bars

    Bring sugar, salt, and corn syrup to full boil on moderate heat in saucepan, stirring constantly. Cook for 45 seconds to 1 minute, depending on firmness desired, then remove from heat.

    Stir in peanut butter until blended. Add rice cereal and stir until moistened. Peanut butter mixture will become stiff quickly.

    Spread onto waxed cookie sheet or into 8 inch square baking pan. Cool. Cut into bars. May also be dropped by teaspoonfuls onto waxed paper. Enjoy.
