I don't know what to say except I LOVE THESE. It isn't difficult to adjust the recipe with different types of jelly or toppings for different tastes or occasions. These are a V-Day treat I enjoy making to take to Valentine's parties.

Ingredients For passionate cookie bars

  • 2 1/2 c
    all purpose flour
  • 1 c
    granulated white sugar
  • 3/4 c
    pecans or walnuts
  • 1
    egg
  • 1 c
    cold butter
  • 1 1/2 c
    passion fruit jelly
  • 1/2 to 3/4 c
    flaked coconut

How To Make passionate cookie bars

    Preheat oven to 350 degrees and grease a 9x13x2 baking pan.

    In a large mixing bowl, stir together flour, sugar, nuts and egg in a large bowl. Cut in the cold butter with a pastry cutter or fork until it is a coarse crumbly mixture. Measure out about 1 1/2 cups and set aside.

    Firmly press the remaining crumbs into the bottom of greased pan. Stir jelly to soften and make it easier to spread, if it is too thick add a teaspoon or two of water. Spread over crumb mixture and then crumble the reserved crumb mixture over the top.

    Bake about 40-45 minutes, will be light brown. Top with coconut flakes and cook completely in pan before cutting into bars.
