These are no ordinary oatmeal cookie. They actually have a little protein in them, and are made with brown rice flour for some added health value. But don't let that scare you, because these are still full of scrumptious flavor. Each cookie surprises you with a pop of cranberry, sweetness of a raisin, and chocolate in every bite.

Ingredients For oatmeal surprise cookies

  • 1 3/4 c
    brown rice flour
  • 1 c
    rolled oats
  • 1 tsp
    salt
  • 1 tsp
    baking soda
  • 1 tsp
    cinnamon
  • 3 Tbsp
    chocolate-flavored whey protein powder
  • 1 c
    butter, room temperature
  • 3/4 c
    brown sugar
  • 3/4 c
    white sugar
  • 1 1/2 tsp
    vanilla extract
  • 1 tsp
    lemon juice
  • 2
    eggs
  • 1/2 c
    golden raisins and dried cranberries
  • 1/2 c
    chocolate chips
  • 1/4 c
    chopped walnuts

How To Make oatmeal surprise cookies

    Preheat oven to 350 degrees. Prepare cookie sheet with parchment paper.

    Combine flour, oats, cinnamon, salt, protein powder and baking soda in medium bowl, blend, and set aside.

    In a large bowl, cream the sugars and the butter together. Add the eggs, lemon juice and vanilla.

    Stir in the dry ingredients with the wet until well blended. Add the raisins, cranberries, chocolate chips and walnuts.

    Form balls approximately 1 inch in diameter and place on cookie sheet. Bake for 10-12 minutes. Cool on wire rack, and serve when ready.
