Basically an oatmeal cookie with butterscotch chips. Quite tasty, just be careful not to overbake them!

Ingredients For oatmeal scotchies

  • 1 1/4 c
    flour
  • 1 tsp
    baking soda
  • 1/2 tsp
    ground cinnamon
  • 1 c
    butter, softened
  • 3/4 c
    sugar
  • 3/4 c
    brown sugar
  • 2
    eggs
  • 1 Tbsp
    vanilla
  • 3 c
    quick or old fashioned oats
  • 1 pkg
    butterscotch morsels (1 2/3 cup)

How To Make oatmeal scotchies

    Heat oven to 350 (the original says 375, but I always bake cookies at a slightly lower temp then recipes say to do).

    Combine flour, soda, salt and cinnamon in small bowl. Cream together butter, sugar, brown sugar, eggs and vanilla. Gradually add in flour mixture to the butter mixture. Stir in oats and morsels.

    Drop by rounded tabespoon onto ungreased baking sheets. Bake 7-9 minutes. Cool on baking sheet for about 2 minutes before moving to wire rack to cool completely.
