These are my personal favorite cookies. The original recipe is not mine but I have adjusted it over the years to make it my own. It is crisp with lots of flavor.

Ingredients For loaded oatmeal cookies

  • 1 c
    butter flavored shortening
  • 1 c
    light brown sugar, firmly packed
  • 1/2 c
    white sugar
  • 2
    large eggs
  • 1 1/2 c
    unbleached white flour
  • 1 tsp
    baking soda
  • 1/2 tsp
    salt
  • 1 tsp
    cinnamon
  • 3 c
    old fashioned oats
  • 1/2 c
    goldnen raisins
  • 1/2 c
    shredded and chopped coconut
  • 1/2 c
    nuts chopped (your favorite)
  • 1 tsp
    vanilla extract

How To Make loaded oatmeal cookies

  • 1
    Cream shortening, sugar, eggs and vanilla. Sift flour, baking soda,salt and cinnamon together. Add slowly to wet ingredients. Add rolled oats 1/2 cup at a time. add remaining ingredients being careful to mix throughly.

    Divide into 3 equal and form into logs. Wrap in wax paper or plastic wrap and put in freezer at least 4 hours. Cut 12 1/4 inch slices per baking sheet. Bake for 10 - 12 minutes.

    Returning unused portion to freezer until ready for next baking cycle or until needed. May be stored in unbaked in an air tight container up to 2 months.
